Focus Protein Granola

2 cups rolled oats
1/2 cup shredded coconut
1/4 cup Maca powder
2 tbsp flaxseed meal
1/2 cup chia seeds
1/2 cup pepitas
1/4 cup sunflower seeds
1 cup chopped almonds
1/4 cup chopped hazelnuts
1/2 cup chopped dried apricots
1 pack (3 serves) Peak Focus chocolate (chopped into small pieces)
1/4 cup brewed coffee
3 tbsp coconut oil
1/4 cup honey (preferably Manuka)
1 teaspoon vanilla essence
Mix all dry ingredients (except salt) together in large bowl.
Melt the coconut oil, then add coffee, honey, salt and vanilla.
Pour this over the dry ingredients and mix well until everything is covered.
Line a large baking tray with non-stick paper and spread the mix all over the tray.
Bake at 160 degrees (fan forced) for about 18mins.
Leave it to cool and that way you will end up with some large chunks which are great for snacking.
Store in an airtight container.
Perfect way to start your day with energy and focus- just add some yoghurt and berries for a delicious, satisfying and healthy breakfast!
